چکیده

Modified atmosphere packaging (MAP) is increasingly used to extend shelf-life of fresh produce. In the present work, we determine the survival and growth of Yersinia enterocolitica and aerobic mesophiles on fresh poultry sausage under MAP. Samples were divided in two lots, half inoculated with 10 cfu g of Y. enterocolitica ATCC 9610, and half uninoculated control samples. The inoculated and control samples were packaged in different CO2 concentrations and storage at 4±1°C, during 19 days. Parameters of microbial growth (lag and log phase) were determined by Baranyi and Roberts’s equation. Aerobic mesophiles counts presented similar log and lag phase in all samples, except for the ones packaged with 20% CO2. In the inoculated samples Y. enterocolitica showed negative log phase in 100% CO2, 80% CO2, and 40% CO2, 2.1 days in 20% CO2, and approximately 0.3 day in air and 100% N2. The lag phase varied from 0.9 to 12.0 days (air and 100% CO2, respectively). Results show that MAP slowed the growth of Y. enterocolitica due to the bacteriostatic effect of CO2 on the development of this pathogen in the samples, but MAP itself was not able to eliminate this pathogen.

Effect of high-oxygen and oxygen-free modified atmosphere packaging on the spoilage process of poultry breast fillets.

A comparison was made of the effect of atmospheres containing high oxygen (70% O2 and 30% CO2) or high nitrogen (70% N2 and 30% CO2) on the spoilage process during storage (at 4°C) of poultry fillets. Four samples of each gas atmosphere were analyzed at 7 sample points during storage. For this analysis, the growth of typical spoilage organisms (Brochothrix thermosphacta, Pseudomonas spp., Enter...

Effect of MAP and Different Atmospheric Conditions on the Sensory Attributes and Shelf life Characteristics of Fresh Pistachio Nuts

Modified atmosphere packaging (MAP) was used to increase the shelf life of fresh in hull pistachio nuts (Pistacia vera L.), meeting the market demand for fresh high quality products. Fresh in hull pistachio nuts were stored at 5°C and three different gaseous conditions including 10% O2, 20% CO2 and 70% N2 (MAP1), 100% CO2 (MAP2) and ambient atmosphere for 42 days. The samples of 300 g of pistac...

Growth of Listeria monocytogenes and Yersinia enterocolitica on cooked modified-atmosphere-packaged poultry in the presence and absence of a naturally occurring microbiota.

Cooked poultry cuts were inoculated with five-strain composite mixtures of either Listeria monocytogenes or Yersinia enterocolitica (1,000 CFU/150-g piece), packaged in 44:56 CO2-N2, and stored at 3.5, 6.5, or 10 degrees C for up to 5 weeks. Both L. monocytogenes and Y. enterocolitica grew under all test conditions. The presence of a naturally occurring microbiota did not influence the growth o...

Destruction of Yersinia enterocolitica by Lactobacillus sake and Pediococcus acidilactici During Low-temperature Fermentation of Turkish Dry Sausage (sucuk)

Effects of starter cultures, Lactobacillus sake and Pediococcus acidilactici, on the survival of Yersinia enterocolitica were studied in Turkish dry sausage (sucuk). Inoculated Y. enterocolitica (approximately 5.0 log CFU/ g) was eliminated completely in sausages by L. sake (about 7.0 log CFU/g) and P. acidilactici (about 7.0 log CFU/g) by the 3rd d of fermentation but was not totally eliminate...
